What is Philippines chocolate known for?

Filipino chocolate leans toward caramel, cream and a soft earthiness, with an unusual signature of bergamot that appears more often than in almost any other origin. The country has a fast-growing bean-to-bar scene built on home-grown Trinitario, much of it from the Davao region in the south.

The Philippines is having a moment. A wave of makers has put Filipino Trinitario on the map, and the bars tend to be approachable: caramel and cream over an earthy base, lifted by that distinctive bergamot-like citrus.
