About Colombia cacao

What is Colombia chocolate known for?

Colombian chocolate is a fast-rising fine-flavour origin with a broad palate: ripe fruit, nuts, caramel and a gentle acidity that varies by region. Cacao grows from the Pacific coast around Tumaco to Santander, Arauca and the Sierra Nevada, and Colombian bars have become regular fixtures at international chocolate awards.

For years Colombian cacao was mostly consumed at home, but a wave of investment in fine-flavour growing has pushed it onto the world stage. Expect rounded, approachable bars: ripe fruit and caramel with enough structure to stay interesting, rather than the extreme acidity of some origins.

Regions matter here. Santander, Arauca, Tumaco on the Pacific and the Sierra Nevada near the Caribbean each contribute different profiles, so Colombian single-origin bars reward paying attention to where in the country the beans came from.
