Nébula is a distinct dark chocolate bar produced by Cacao Disidente.

The foundation of this bar is cacao sourced from the Sierra Nevada de Santa Marta region in Colombia. The beans undergo a protocol involving controlled fermentation in wooden boxes, followed by drying in solar tunnels to manage moisture levels. During the manufacturing process, the ingredients are refined using a melanger to achieve the desired consistency. The final bar consists of only three components: cacao beans, cocoa butter, and organic cane sugar.

At 92% cacao, Nébula offers a high-intensity profile that showcases the raw characteristics of the Colombian terroir. The sensory profile is marked by notes of red fruits, nuts, and citrus, which emerge despite the very high cocoa content. It serves as an example of how precise processing techniques can balance intense cocoa concentrations with nuanced aromatics.
