What is Venezuela chocolate known for?

Venezuelan chocolate is famous for soft, nutty, classically chocolatey flavour with low acidity, built on a heritage of fine Criollo and Trinitario cacao. Names such as Chuao, Porcelana and Sur del Lago are among the most sought-after in the fine-chocolate world, valued for delicacy and depth rather than sharp fruit.

Venezuela is the spiritual home of Criollo, the rare, mild and aromatic cacao that most other origins lost to hardier hybrids. That heritage gives many Venezuelan bars a rounded, nutty, almost creamy profile with notes of toasted nuts, caramel and dried fruit and very little of the bright acidity you find in Madagascar or Peru.

Chuao, a coastal village whose cacao is shipped out by boat, and Porcelana, a pale, prized Criollo from the Maracaibo region, are two of the most celebrated names in chocolate. Bars carrying them tend to sit at the premium end for good reason.
