What is India chocolate known for?

Indian chocolate carries a signature you rarely meet elsewhere: jaggery, the dark unrefined cane sugar many Indian makers fold into their bars, which brings molasses and brown-sugar depth. Around it sit warm spice, citrus and an earthy cocoa base. India has become one of the fastest-rising bean-to-bar origins, led by growers and makers in the south.

Cacao grows mainly in southern India, across Kerala, Karnataka, Tamil Nadu and Andhra Pradesh, much of it Trinitario and forastero. For years it fed the commodity market, but a young craft scene has turned it into a genuine single origin worth seeking out.

The jaggery note is the giveaway. More than almost any other origin, Indian bars carry that dark, molasses-like sweetness, often beside spice and citrus, which makes them easy to pick out in a blind tasting.
