What is Brazil chocolate known for?

Brazilian chocolate leans deep and savoury, with earthy, woody character and a distinctive note of tobacco that shows up in Brazilian bars more than almost any other origin, over a base of dark fruit. Bahia is the historic heartland, and a new wave of growers there and in the Amazon region of Para has carried Brazil from a bulk-cacao past into a serious fine-flavour origin.

Brazil has grown cacao for centuries, but a plant disease devastated its Bahia plantations in the late 1980s and the industry took years to recover. Out of that came a renewed focus on quality, and today Brazilian craft bars can be excellent: deep and savoury, with earthy, woody and tobacco notes over dark fruit.

The Amazon region of Para is the other story to watch, with growers reviving wild and native cacao. Brazil is unusual in being both a major cacao grower and a large chocolate-consuming country, which gives its craft scene a strong home base.
