The 75% dark chocolate reveals floral, fruity, and fragrant notes. It is crafted with a short list of ingredients consisting of cocoa, cocoa butter, and sugar. The composition excludes lecithin, vanilla, vanillin, PGPR, and vegetable fats, relying instead on added cocoa butter for its texture. It is not alkalized, allowing the natural character of the Brazilian beans to remain prominent.
Bonnat maintains a direct-trade approach to its sourcing. This commitment to origin quality was recognized with a bronze medal at the 2015 International Chocolate Awards.
