Bonnat is a multi-generational French bean-to-bar chocolatier based in Voiron. Currently led by Stéphane Bonnat, the company maintains a tradition of craftsmanship, focusing on the processing of single-origin beans at their historic facility.

The Alto Piura 75% is crafted from Criollo cacao beans harvested in the Alto Piura region of Peru. This bar exhibits a flavor profile defined by a mild acidity and fruit-forward characteristics, specifically presenting notes of citrus, fresh fruit, and berry. The formulation relies on a minimalist approach, containing only cocoa, cocoa butter, and sugar.

The production process prioritizes the natural expression of the cacao. Consequently, Bonnat excludes additives such as lecithin, vanillin, and vegetable fats from the recipe. Each 100g bar serves as a focused representation of its Peruvian origin.
