Produced by the artisan maker Chocolate Tree, Belize Black is a 100% cacao bar that showcases the raw intensity of beans harvested in the Maya Mountains region of Belize. As a bean-to-bar producer, Chocolate Tree maintains control over the entire manufacturing process, refining their cacao using a melanger to achieve the desired texture.

The flavor profile of this unsweetened bar relies on the quality of the Native Criollo and upper Amazon hybrid beans. These are subjected to a 7-day fermentation process in tiered cedar boxes, followed by careful sun-drying on racks. The resulting profile presents specific notes of figs, pineapple, and raisins, demonstrating how precise post-harvest handling influences the final tasting experience.

The composition of Belize Black remains minimal, consisting only of organic cacao beans and organic cocoa butter.
