Produced by the New Zealand-based maker Foundry, the Anamalai Estate 100% bar originates from single-estate cacao grown in India. This bar consists entirely of cacao, with no added sugar, milk, vanilla, lecithin, or vegetable fats.
The cacao undergoes a fermentation process of 6 days in wooden boxes, followed by 5 to 7 days of sun drying on raised beds. During manufacturing, the beans are processed using a melanger. The resulting chocolate presents flavor notes of sweet dates, malt, and citrus.
