This 70% dark chocolate is composed of just two ingredients: Trinitario cacao beans and organic cane sugar. The beans undergo a meticulous six-day fermentation in three-tier wooden boxes before being sun-dried on raised beds. Once at the workshop, the chocolate is refined in a melanger to achieve a precise texture that highlights its vibrant flavor profile, characterized by distinct notes of wild berries, creamy honey, and complex citrus.
The cacao is sourced directly from the Kokoa Kamili cooperative, an organization highly regarded for its commitment to quality and post-harvest innovation in Tanzania. This collaborative approach has earned significant recognition on the global stage, including a Silver award at the 2022 Academy of Chocolate and a Gold medal at the 2022 NZ Chocolate Awards, cementing its status among specialty chocolate enthusiasts.
