This 55% milk chocolate utilizes cacao beans from West Papua, Indonesia. The beans undergo a precise 6-day fermentation process across three 48-hour stages, followed by 5 to 7 days of open-air drying in indirect sunlight. The resulting bar offers a complex sensory profile characterized by hazelnuts, cream, and caramel, balanced by the tropical influence of banana and deeper tones of liquorice, black tea, and spices.
The formulation highlights a transparent use of ingredients, including cacao and cacao butter, locally sourced Dutch cow milk, Dutch sugar, and sunflower lecithin. The quality of this production method was recognized with a silver medal from the Academy of Chocolate in 2025.
