ZOTO is a Belgian bean-to-bar producer. This 45 g bar features cacao sourced from the Yunga farm in the Manabi region of Ecuador, specifically utilizing the EET103 bean variety.
The post-harvest protocol involves a 120-hour box fermentation with 3 turns, followed by 24 hours of pre-drying and 7 days of solar drying in a tunnel. The beans undergo a roast of 120°C for 20 minutes before being refined in a melanger (stone grinding). The resulting 80% dark chocolate, sweetened with beet sugar, offers flavour notes of nectarine, gardenia, macadamia, and raisin bread.
