ZOTO is a bean-to-bar maker based in Belgium. This 45 g bar features 72% cacao derived from the Mayan Red bean variety grown in the Copán region of Honduras.
The cacao undergoes a specific post-harvest protocol consisting of 120 hours of fermentation with 2 turns, followed by 7 days of solar tunnel drying on wooden decks. During production, the bar is refined in a melanger and roasted at 125°C for 20 minutes. The resulting dark chocolate presents flavour notes of coffee, almonds, caramel, and latte.
The ingredients list cacao and cocoa butter, with 27.2 g of sugar and 42.6 g of fat per 100 g. The bar contains no lecithin, vanilla, vanillin, PGPR, or vegetable fats.
