The beans undergo box fermentation and sun drying at a post-harvest facility where fruit trees, including oranges, limes, lemons, plantain, bananas, guayaba, and papaya, are grown among the cacao. The bar is made with cocoa nibs, organic cane sugar, and cocoa butter, and SOMA processes the chocolate using a ball mill.
