Maple & Nibs

Raaka is a bean-to-bar maker based in Brooklyn, New York. They distinguish their process by eschewing traditional high-heat roasting of the cocoa beans, opting instead to preserve the raw, inherent characteristics of the origin. This specific bar is crafted from cacao sourced from Mbingu in the Morogoro Region of Tanzania, where the beans undergo a controlled process of 6 days of box fermentation followed by 5 to 7 days of sun drying on raised beds.

The Maple & Nibs bar features a minimalist ingredient list consisting only of organic cacao beans, organic maple sugar, and organic cacao nibs. Because the cacao remains unroasted, the chocolate displays a flavor profile reminiscent of brownie batter, toffee, and a mild, toasted quality. The inclusion of cacao nibs adds a deliberate textural contrast to the 75% cacao base, creating an experience that highlights the fruit-forward nature of the Tanzanian harvest.
