Raaka is a United States based bean-to-bar maker that produces chocolate from scratch. This 51 g bar features Trinitario cacao beans sourced from the Zorzal Cacao estate in the Duarte Province of the Dominican Republic.
The chocolate is made with unroasted cacao beans, which are fermented for 120 hours in wooden boxes, turned once per day, and dried for 7 days. The finished bar is refined in a melanger. It features fruity and salty flavour notes, achieved through the addition of Peruvian pink sea salt to the dark chocolate base.
