About Bourbon Cask Aged
Raaka is a bean-to-bar maker based in the United States. They produce this 51 g bar using cacao sourced from the Mbingu region of Tanzania.
As a raw chocolate, the beans are unroasted. The Kokoa Kamili post-harvest protocol involves a 144-hour box fermentation and sun drying. Before stone grinding in a melanger, the cacao nibs are aged in bourbon casks from Berkshire Mountain Distillers. This process contributes to flavour notes of caramel, vanilla, and oak. The bar is tempered and contains added cocoa butter.
