Limited Edition #5 is a 72% dark chocolate bar produced using high quality Trinitario and Criollo cocoa varieties. The cocoa beans are exclusively sourced from Suriya Farm in the Chantaburi province of Thailand, a region gaining recognition for its specific agricultural conditions.
The production process focuses on bringing out the character of the Thai origin. The beans undergo a 6-day box fermentation process followed by careful sun-drying. During manufacturing, the ingredients, which consist of cocoa beans, cane sugar, and soy lecithin, are processed through a melanger to achieve the final texture. The resulting bar presents a sensory profile marked by red fruit, honey, and tobacco.
Each bar has a net weight of 80 grams. Nutritional analysis for this production indicates a sugar content of 28g per 100g and a fat content of 43g per 100g, reflecting the balance between the natural cocoa butter and the added cane sugar.
