The cacao beans undergo box fermentation for 144 hours before being sun dried. Once at the workshop, the bar is refined in a melanger. The resulting dark chocolate presents a flavor profile defined by sour cherry, oak, and walnut.
The bar is made with cacao beans, cane sugar, and added cocoa butter. It does not contain lecithin, vanilla, vanillin, PGPR, or vegetable fats. All products from this maker are produced in a facility that also processes nuts and milk.
