The foundation of this bar is Trinitario cacao grown in the Ransiki region of Indonesia. These beans undergo a specific post-harvest protocol consisting of 6 days of fermentation in gumwood boxes before being dried on racks in the sun. The resulting chocolate presents a profile characterized by fruity and spiced notes, reflecting the high 84% cocoa content. Only two ingredients are used in the process: cocoa beans and cane sugar.
