This bar utilizes a 69% dark chocolate base, refined using a melanger and subjected to a quantitative conching process. The flavor profile is defined by the inclusion of juniper berries, juniper oil, and Swiss stone pine oil, which lend a distinct gin-inspired, resinous quality to the cocoa mass. The texture is structured by the addition of raw cane sugar, creating a balanced interaction between the deep cacao notes and the aromatic essential oils.
