Friis Holm is a Danish bean-to-bar maker that produces this 100% cacao bar using beans sourced from the La Dalia region in Nicaragua.
This bar consists of a field blend of beans from 10 different growers in La Dalia who ferment their crops together in boxes. The resulting unsweetened chocolate presents a complex profile of strong aromatic acidity, deep cocoa, blackcurrant, dark cherries, and spiced floral aroma. Further tasting reveals a mineral character, crisp astringency, wooded hints, and red fruit. The recipe contains only cocoa beans and cocoa butter, with no added sweeteners.
The bar contains 50g of fat per 100g and is entirely free of lecithin, vanilla, vanillin, PGPR, and vegetable fats. It may contain traces of milk.
