Palette de Bine is a small-batch bean-to-bar chocolate maker based in Canada. Founded on the principle of minimal intervention, the workshop focuses on showcasing the specific characteristics of individual cacao harvests through careful roasting and processing.

The Maya Mountain 72% bar centers on cacao sourced from the Maya Mountain region of Belize. The sensory profile is defined by a bright acidity, characterized by distinct red fruit tones paired with subtle hints of citrus. The formulation is intentionally simple, consisting only of cocoa beans and organic cane sugar, allowing the natural properties of the Belizean beans to remain the focal point.

The production process prioritizes transparency and ingredient quality. While the bar is composed of just two core components, it is manufactured in a facility that also handles milk, and it is labeled with an allergen warning for those with sensitivities. Each 70 gram bar provides 571 kcal per 100 grams.
