SOMA, based in Toronto, Canada, operates as an artisan bean-to-bar maker. This bar features Amelonado cacao harvested on Malekula Island, Vanuatu. The wet cacao is collected from small farms surrounding Pinalum and processed at a central fermentation and drying facility.
The cacao undergoes a 120-hour box fermentation process. During production, the chocolate is refined in a melanger and consists of cocoa nibs, organic cane sugar, and cocoa butter. The recipe excludes lecithin, vanillin, and vegetable fats. The resulting flavor profile includes notes of chocolate cake, lemons, tamarind, caramel, and fresh wood.
