Zenith

Zenith is a production from ruvido, an artisan maker dedicated to the craft of bean-to-bar chocolate. Based on a philosophy of simplicity, this bar focuses on the intrinsic qualities of its origin.

The 75% dark chocolate is crafted from beans sourced in Mbingu, Tanzania. These beans undergo a 6-day fermentation process in two-tiered wooden boxes to develop their specific profile. During the refining stage, ruvido employs a melanger to achieve the final texture, utilizing only cocoa beans and raw cane sugar in the formulation.

The raw cacao for this bar is managed by the Kokoa Kamili social enterprise, which sources wet beans from approximately 5000 smallholder farmers to ensure post-harvest quality. Note that this facility processes other allergens, and the bar may contain traces of milk, eggs, nuts, peanuts, and gluten.
