The 70% dark chocolate undergoes a light roast, while the beans are fermented in wooden boxes lined with banana leaves before undergoing sun drying. The resulting flavour profile is complex, characterized by spicy, earthy, and pepper notes, balanced with fruity undertones of plums and ripe fruit. Subtle hints of cashew nuts, menthol, and sweet peas round out the experience.
The ingredients consist of 64% cacao nibs, 30% cane sugar, and 6% added cacao butter. It contains no lecithin, vanilla, vanillin, PGPR, or vegetable fats. The bar was recognized at the International Chocolate Awards Asia-Pacific with a Bronze medal in 2018 and the Academy of Chocolate with a Bronze medal in 2016. Please note that this product is manufactured in a facility that also processes milk, peanuts, cashews, and eggs.
