Bonajuto is an artisan maker based in Modica, Sicilia, where the firm has operated since 1880. As a long-standing fixture in the region, the maker follows traditional methods, including refining in a melanger to prepare the cacao.

This 50 g bar is a 65% dark chocolate that utilizes sugar as a sweetener. The flavour profile centers on notes of citrus and tangerine, which are complemented by the inclusion of 0.6% tangerine zest within the cocoa mass. The production process also incorporates tempering to finish the bar.

The ingredient list is minimal, containing only cocoa mass, sugar, and tangerine zest. This bar does not include lecithin, vanilla, vanillin, PGPR, vegetable fats, or added cocoa butter.
