About Cinnamon Chocolate
Bonajuto is located in Modica, Sicilia, and holds the distinction of being the oldest chocolate factory in Sicily, with operations dating back to 1880. As a bean-to-bar maker, the producer maintains a tradition of refining cocoa in a melanger, a process that defines the texture of their output.
This 100 g bar of 50% dark chocolate presents a profile defined by the inclusion of cinnamon. The resulting flavour notes are warm and enveloping. The bar is produced through stone grinding in a melanger and maintains a composition of cocoa mass, sugar, and 0.06% cinnamon.
The bar is formulated without lecithin, vanilla, vanillin, PGPR, vegetable fats, or added cocoa butter. It carries PGI and IGP (Protected Geographical Indication) certifications.
