The Buzzz..ed Bar 60% is a creative exploration by BAR (Baker's Artisanal Recipes), a maker focused on pushing boundaries through experimental processing. The cacao comes from Sadhu Farm in the Mangalore region of India, where the beans are fermented for six days and turned four times before drying.
What sets this bar apart happens after the ferment rather than during it: Maka di honey ale is applied to the already-dried beans and left to work for two days. The beans are solar dried, moving into a greenhouse when the weather turns. Cacao nibs add texture, though the pack folds them into "Cacao" rather than listing them separately, and sugar and emulsifier INS-322 close out a short ingredient list.
The result is an 80-gram bar with fruity, berry and fresh fruit notes. By treating dried beans with a craft honey ale instead of brewing the ale into the ferment itself, the maker layers the beer's character over a conventionally fermented Mangalore cacao.
