Alter Eco is an industrial chocolate maker based in the United States. They produce this 100 g dark chocolate bar using Trinitario cacao grown in the Alto Huayabamba region of Peru. The cacao is processed by the Acopagro cooperative through box fermentation for 168 hours followed by sun drying.
With 90% cacao, this bar offers an intense profile characterized by malty and earthy flavour notes. The recipe includes cocoa mass, added cocoa butter, cane sugar, and vanilla pod. It does not contain lecithin, vanillin, PGPR, or vegetable fats, resulting in a composition with 9 g of sugar and 56 g of fat per 100 g.
