Bonajuto is a bean-to-bar producer based in Modica, Sicily. As the oldest chocolate factory in the region, the company has operated in Modica since 1880.
The Novanta % bar is a dark chocolate blend of more than one origin, containing 90% cacao. With 10g of sugar per 100g, the profile is defined by toasted wood and dried fruit notes. It is a persistent and strong bar, produced using cocoa mass and sugar. Bonajuto employs stone grinding in a melanger to refine the ingredients, and the maker claims or describes tempering during production.
