This dark chocolate has a 36 hour conching period and a medium roast. Its flavor profile is characterized by notes of fresh fruit and dried fruit. Using only cocoa beans, cane sugar, and cocoa butter, the maker avoids lecithin and vanillin. The cacao is from the 2023 harvest.
Sourcing for this bar leads to the Davao region of the Philippines. The cacao is centrally fermented for four days in wooden, three-tier cascade boxes before being dried on covered mats for eight to ten days.
