Mexico - Finca la Rioja 'Don Moisés'

Produced by the Dutch maker Krak, this 70% dark chocolate bar is crafted from a specific Nano Lot harvested in 2023. The cacao originates from the Don Moisés lot at Finca la Rioja in Cacahoatán, Chiapas, Mexico. The blend consists of Criollo, Pentágona, and Lagarto bean varieties.

The beans undergo a fermentation process in wooden boxes for five days, with three daily turns, followed by sun-drying on wooden storage areas. After processing in a melanger, the resulting chocolate features a flavor profile defined by notes of raspberry, sparkling lemon, and tannins, balanced by a slight acidity and bitterness. The bar contains 29 grams of sugar and 41 grams of fat per 100 grams, and it excludes additives such as lecithin, vanillin, vegetable fats, and PGPR.

The 80-gram bar consists of two ingredients: cocoa beans and unrefined cane sugar. It earned a Gold award from the Academy of Chocolate in 2023.
