The character of this chocolate is defined by careful, minimal processing. The maker employs a light roast to protect the inherent aromatic complexity of the Beniano variety. The refining process uses a stone-ground method, which provides a specific texture and soul to the bar. This 50 gram bar is crafted with only three ingredients: heirloom cacao, organic cane sugar, and cacao butter, intentionally omitting additives like lecithin or vanillin.
