The 75% dark chocolate reflects the specific handling of the beans, which are fermented and dried on the church grounds of the local Empresa Campesina de Chuao. The final profile is built upon a minimalist composition of cacao beans, sugar, and added cacao butter. On the palate, this bar yields distinctive flavors of fresh fruits and citrus, anchored by warm undertones of brown sugar and hazelnut.
