Mekong Chilli

Mekong Chilli is a specialty dark chocolate bar produced by Alluvia, an artisan bean-to-bar maker located in the Mekong Delta region of Vietnam. By controlling the production process from the cocoa bean to the finished bar, the maker highlights the specific characteristics of cacao grown in the fertile alluvial soils of the delta.

The 64% cocoa formulation relies on a minimalist ingredient list consisting of cocoa nibs, sugar, cocoa butter, and locally sourced chilli. The production involves refining the mass to a smooth texture, followed by a precise tempering process. This results in a flavour profile defined by its warm, intense, and lingering character, where the spice element complements the inherent notes of the Vietnamese cacao.

Each bar weighs 80 grams and serves as a regional expression of Vietnamese agriculture. By sourcing ingredients directly from the Mekong Delta, the producer ensures that the terroir of the region remains the focal point of the final product, steering away from heavy processing in favor of showcasing the natural qualities of the raw components.
