Dedicated Chocolate
Dedicated Chocolate makes chocolate from the bean in Hong Kong, at a workshop in Lai Chi Kok, Kowloon. It says it adds no chemicals, additives or preservatives.
Beans are sorted by hand, roasted to a profile for each origin, cracked and winnowed, then ground and conched for up to a few days before tempering. The bars are moulded by hand.
Its single-origin range has used beans from Venezuela, Peru, the Dominican Republic and Tanzania. It also makes flavoured bars, chocolate-covered nuts and drinking chocolate, and sells at shops in Hong Kong.
