Chocolaterie Origines makes organic bean-to-bar chocolate in its shop at the Darwin site in Bordeaux, from beans of eight origins including Liberia and Peru.
Chocolaterie Origines was started by two friends, Manu, a former restaurateur, and Olivier, a chocolatier. It makes its chocolate from the bean in its shop at Darwin, 87 quai des Queyries, Bordeaux, where the machines stand in the shop itself.
Each bag of beans is roasted separately, then winnowed, refined in a conche and matured as blocks in a cellar before tempering and moulding. Bars are packed by hand.
Its beans come from Liberia, Peru, Colombia, Ecuador, Congo, the Dominican Republic, São Tomé and Haiti, chosen with the help of the Bordeaux trading company Cocoateam. The maker says its cacao is 100% organic.
1 shop on Chof carries Chocolaterie Origines. Each shop picks its own bars, so selection varies.
