Tree-to-bar chocolate is made by a producer involved from the cacao tree through to the finished chocolate.
Tree-to-bar is rarer than bean-to-bar because the producer needs direct involvement in cacao farming, fermentation, drying and chocolate making.
It can give unusually strong traceability when the maker clearly discloses the farm, harvest and processing details.
