What is bean-to-bar chocolate?

Bean-to-bar chocolate is made by a maker who works from raw cacao beans all the way to the finished bar.

A bean-to-bar maker typically roasts, cracks, winnows, grinds, refines, conches, tempers and moulds the chocolate themselves.

That does not automatically make the bar good, but it does tell you the maker has more control over flavour, texture and sourcing than a brand that only melts finished couverture.
